As summer is arriving and the heat is increasing we are heating things up!
As for the future both Holly and Nicole are expanding their knowledge. Holly has started her qualification with Stott Pilates, a world-renown and highly endorsed Pilates certification, and Nicole is starting a course in specialised kinesiology. Kinesiology studies the mechanics of human movement and how they impact our health and wellbeing.

Time to get our thinking caps on!

Monthly Recipe

500g strawberries
2 tsp sugar
Juice of 1 lemon
Shortcrust pastry (supermarket bought is fine)
1 tablespoon oat milk to brush on the edges

Wash the strawberries and cut them into round slices as you see in the photo, put them in a bowl and add the juice of one lemon
Add the sugar and mix well. Let the strawberries rest in the fridge for at least 15 minutes
Turn on the oven at 200°C
Put the shortcrust pastry with a paper base in a round pan. Add the strawberries. Try NOT to put all the liquid that remains at the bottom of the bowl
Fold the perimeter of the pastry towards the inside of the galette trying to give it a nice shape.
Brush the oat milk onto the pastry ledge. This will make the pastry more golden
Add a sprinkle of sugar on the ledge to give a nice gloss effect to your galette.
Bake for 40-45 minutes at 200°C or until the galette is golden

When transferring the strawberries to the pastry, be sure to remove as much liquid as possible so as not to make the galette too wet.
Use a little sugar for this cake but the quantities can be adapted according to individual tastes.
You can serve your Galette with vegan vanilla or hazelnut ice cream or with custard.

Exercise of the month

Grand Battement
Grand Battement is a classical ballet term which means “large battement.”  A dancer performs a grand battement by throwing the working leg into the air from the hip and brings it back down with control, also known as a kick.
In Total Barre this has been altered slightly to be done in both parallel as well as the usual turned out position.

Grand Battements are great for working the muscles of the legs, as well as the abdominal muscles; as it requires a decent amount of core strength to control the leg especially in the decent and to keep the torso erect and relatively still while the leg moves freely.

Flexibility is another element of this exercise. During the move the hamstrings and glutes lengthen, the longer the muscles can stretch the higher the leg can go (along with muscle strength). But the move itself is a great way to improve the flexibility in the legs.

Grand Battements can be performed to the front, side and also to the back, working the legs in every direction.
